Cottage Cheese Chips

These light and crisp chips are a real treat. The hardest part of making them is to not eat them all at once! You can also make them plain without the Parmesan cheese if you prefer. The time needed in the microwave will vary depending on your microwave wattage. Make only 4-6 at a time for best results. You can add seasoning such as Ranch or cheese powder to the mix before microwaving or season the chips after they are done.

Ingredients
  

  • 5.3 ounces 4% Cottage cheese
  • 1 ounce Parmesan cheese shredded

Instructions
 

  • Mix the cottage cheese and Parmesan cheese well. Drop ½ teaspoon fulls on a small piece of parchment paper, 4-6 mounds of mixture at a time. Microwave for 2-3 minutes or until just lightly brown and crisp.
  • Let cool before removing from parchment paper. Repeat with remaining cottage cheese mixture.

    I know Good Culture is the brand of cottage cheese we use for clean ingredients and higher protein. Is this the brand used for this as well? Thought I read somewhere that it doesn’t work well for these.

        Kristie used full power. Results, and time needed, may vary based on microwave wattage.

    It really needs to be 4% doesn’t it? Do you know if it works with 2%?

      Some people seem to have found that 2% works but others find 4% works better. Try it and see which you prefer. A lot seems to also depend on local humidity, microwave wattage, etc.

    Is the Parmesan the real kind or the stuff in the green can? I seem to have a vague memory of Kristi talking about the green stuff.

      You can use the real stuff. The “green can” was when Kristie was still testing different versions with different ingredients and in different quantities.

      Wes adapted them from Seriously Keto. Each chef puts their own spin on the recipe, for sure! This version includes parmesan cheese to help with taste and texture,

    Both Wes from Highfalutin’ Low Carb and Steve from Serious Keto credit the Keto Twins for passing the recipe on from a tic-toc creator. They all agreed it works best with a “less clean” full-fat cottage cheese. Kristie’s idea of adding shredded Parmesan cheese adds flavor and may be the perfect addition making “clean” cottage cheese a workable solution. I haven’t tried it yet but definitely will.

    Can these be sone in a regular oven instead of a microwave?

      We haven’t tested this specific recipe in an oven but there are other recipe creators out there who have done a version in the oven.
