Sugar-free Key Lime Pie Ice Cream

This tangy, sweet summer delight is the best part of a key lime pie!

Rich and creamy full-fat ice cream that’s also sugar free is so luscious that a small serving is plenty satisfying. Garnish with fresh limes or lime zest for even more flavor.

If you don’t have an ice cream maker, you can whip the cream and fold the remaining ingredients in after they have been well beaten. Use a sweetener like allulose or xylitol that won’t freeze as hard as erythritol and monkfruit blends.

Ingredients
  

  • 1 cup heavy cream
  • 1 1/4 cup unsweetened almond milk
  • 1/3 cup allulose
  • 6 drops liquid sweetener
  • 6 egg yolks
  • 2 teaspoons vanilla extract
  • Zest of one lime
  • Juice of one lime
  • 1 teaspoon lime extract or more juice

Crumb Topping

  • 3 tablespoons Oat Fiber or almond flour
  • 1/3 cup sweetener
  • 1/4 teaspoon maple extract
  • 1/8 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 3 tablespoon Butter softened

Instructions
 

  • Use a 1.5-quart saucepan, heat the heavy cream and almond milk on low heat, stirring with a wire whisk.
  • Add the egg yolks. Continue whisking on low heat until the mixture begins to simmer. Heat should come to 165°F.
  • Add the sweetener and whisk until well dissolved.
  • Remove from heat. Stir in vanilla, lime juice, lime zest, and liquid sweetener. Let cool in the fridge.
  • When cooled, follow the directions on your manufacturer’s ice cream maker.
  • To make the crumb topping, mix all ingredients together until a coarse crumb. Sprinkle over individual servings.

    When is the lime zest and lime juice added? And how is the crumb topping made?

      The lime zest and juice are added before putting the mixture into your ice cream freezer. For the crumb topping, just mix it all together and sprinkle over individual servings.
