Low Carb Three Meat Chili

Makes 8 servings

This very low carb chili makes 8 generous servings.  Consider that there is three pounds of meat in the recipe which ensures that it is hearty and filling.  One of the reasons that I’ve added so much meat is because chili can be high carb.  Between the tomatoes and the seasonings, which include some of the highest carb spices, traditional chili recipes are not really very low carb.  Another reason for using various cuts of meat is to provide different texture.  The bite-sized pork and steak help to give a texture similar to beans, which are really out of the question on a ketogenic diet.  With the varying textures of the meats, you won’t miss those little carb bombs.  Like most chili recipes, this chili tastes best a day or two after making it.  We like to top our chili with a dollop of sour cream and/or shredded cheese just before serving.

1 tablespoon bacon fat

1 lb ground beef (93% lean)

1 lb cubed pork steak

1 lb round steak, cut into bite-sized pieces

2 tablespoons dried minced onion or 1/2 cup fresh chopped onion

2 teaspoons minced garlic

2 teaspoons salt

3 tablespoons chili powder

2 teaspoons cumin

2 teaspoons paprika

1 tsp onion powder

1 1/2 cups strained tomatoes

2 cups beef bone broth

1 cup water

4 ounces butter (1/2 cup)

Heat the bacon fat in a 6-quart or larger saucepan over medium high heat. Brown the meats one at a time, stirring to crumple the ground beef as it cooks. Return all of the browned meats to the saucepan.  Add the onion and spices to the browned meat and stir to coat the meat with the seasonings.  When the onions have just browned, add the tomatoes, bone broth, water, and butter.  Simmer uncovered on low heat for 35 to 45 minutes until the broth has thickened.

Substitution Suggestion:  Use your preferred meats, which might include 3 pounds of ground beef or any combination of three pounds of beef, pork, or chicken, including sausage.

Keto Quick Tip:  Freeze portions for quick meals on busy days.

Note: If you prefer, you can drain the fat from the ground beef after browning it.  Using 93% lean ground beef generally yields less fat.

Brown meats. Add onion and spices. Add tomatoes, bone broth, butter and water. Simmer for 30 to 45 minutes.

  1. What meats are we suppose to use? I think I am missing something.😊 I have all your cool books and love your recipes . Bell’s biscuits and creme brûlée are two of my favorites

  3. Kristie – This is delicious! Great balance of flavors. I used one tablespoon of Better Than Bullion beef flavor since beef broth wasn’t handy. I only had a 28 oz. can of tomato sauce for the recipe, instead of the tomatoes suggested. This is some of the best chili I have enjoyed in awhile. Thank you!
