Using precooked sausage or leftover sausage or browning sausage ahead of time makes this a really quick meal. My kids can assemble it themselves, or I can prep it in advance and they simply microwave it once they are hungry.
5 Minute Lasagna is perfect for those hectic weeknights when we all eat on different schedules. The ingredients are simple, inexpensive, and ones that are generally stocked in our kitchen. The hardest part about making this delicious dish is waiting for it to cool!
¼ cup full-fat ricotta cheese
1/3 cup chopped pepperoni
¼ cup cooked and crumbled Italian sausage
2 ounces mozzarella cheese, shredded (about ½ cup), divided
½ cup tomato sauce
½ teaspoon garlic powder
½ teaspoon Italian seasoning
Divide the ricotta evenly between two 8-ounce microwave-safe ramekins. Evenly top each with the pepperoni and sausage. Sprinkle half of the mozzarella cheese into the ramekins (about 2 tablespoons per ramekin). Pour ¼ cup of tomato sauce over each. Sprinkle the garlic powder and Italian seasoning into the ramekins. Top with the remaining ¼ cup of cheese. Microwave at full power for 45 seconds to 1 minute, or until the cheese has melted and the entire dish is bubbling. Watch carefully, as microwave cooking times vary. You might prefer to use two 45-second bursts of cooking time. Use a dish towel or oven mitt to remove from the microwave. Let cool for 5 to 10 minutes before serving.

Cook’s Note: No ramekins? No time to shop for some? No problem! You can also use a small cereal bowl or extra-large coffee mug. Just make sure it is microwave-safe.
Variation: Oven-Baked Lasagna. The lasagna can be baked at 350°F for 10 to 12 minutes, or until bubbling and lightly browned.
Crazy Busy Shopping Tip: Look for the ricotta with the highest fat content and lowest carb count you can find. Store brands are often the best option. Also, one 8-ounce can of tomato sauce is perfect for a double batch of this recipe (four servings). Many cans cost about a quarter.
