Every recipe I share is one that at least one person in my family has enjoyed, and most are approved by a 3-1 majority. I would never share a recipe we don’t like, but I will admit that some are instant winners. This recipe is an instant winner!
Cod in Salsa is not only high in protein and low in carbs, but you can start shoveling it into your mouth in less than 15 minutes from start to finish. It’s that easy!
This recipe is also versatile. Use your favorite low-carb salsa and use whatever fish you prefer. We like cod because it’s mild, but my followers have reported using salmon as well. I’ve even made it with catfish and haddock. Use a firm, white fish that is somewhat uniform in thickness for best results,
My favorite way to serve it is with some sour cream, fresh cilantro, and cheese. Queso fresco is what I suggest in the recipe, but a nice Pepper Jack works well. A smoky provolone probably would as well.
And if you’re really in a hurry, feel free to eat out of the skillet! It tastes even better when you don’t have an extra dish to wash. Just be careful not to burn yourself.
