TikTok is like a parallel universe, and I spent a tiny bit of time there in the past month, peeking in to see how the younger half lives.
What caught my eye was this fun way to make a breakfast sandwich (you really have to watch to see how it goes!). Basically it’s like a special way to fold laundry, but it gives you a tasty breakfast sandwich instead of a fluffy towel.
The keto versions I saw all used yucky, ultra processed breads with questionable ingredients. Of course all were labeled “low carb” or “keto”, but that’s not entirely trustworthy.
What IS trustworthy, is making your own truly low carb bread to make this tasty treat! And it doesn’t have to take three hours on a Sunday afternoon.
I started by making my 90-Second toast in a 9.5” by 4” glass bread loaf pan because I wanted a rectangular shape. I then split the bread into four slices and used two slices to make one sandwich.
Watch the video to see what I did, but here are the ingredients you’ll need:
2 large eggs
2 slices of 90-Second toast
3 slices of bacon, chopped into 2-inch pieces
¼ cup shredded cheddar cheese
1 tablespoon chopped green onion tops (optional)
I’m using a 9” skillet
Notice that you pour the eggs in first. Then lay each slice of 90-second toast on top of the eggs, flipping once so that the bread absorbs some egg. When the entire thing is set, use a large spatula to flip it.
Then add the bacon and cheese on top of the bread, fold the cooked egg up from the sides and fold the bread slices on top of each other and grill until toasty.

One-half of this tasty sandwich was really enough for me as it’s very filling. David found it super filling as well, and he typically has a much hardier appetite than I do.
