
Mojito Muy Bueno
This is a for-Kristie-by-Kristie kind of recipe! Yes, I developed this one just for me. I love the fresh flavors. I let the mint grow wild in the backyard because the fresh mint equals fresh mojitos. If you leave out the rum, this makes a great mocktail that kids can enjoy. If you haven't grown mint before, you might want to plant it in containers, as it really does want to take over the world. As long as the world has rum, that really isn't such a horrible thing…
Ingredients
- juice of one lime About 2 tablespoons
- 3 tablespoons fresh mint, chopped
- 4 drops liquid sweetener Or 1 tablespoon granulated
- 6 fluid ounces seltzer Or club soda
- 2 fluid ounces white rum
- lime wedges or slices, for garnish (optional)
- fresh mint, for garnish (optional)
Instructions
- In a large glass, combine the lime juice, mint, and sweetener.
- Use a muddler or the end of a wooden spoon to bruise the mint, being careful not to shred it.
- When the mint is crushed and fragrant, add the rum and then the seltzer.
- Fill the glass with ice, garnish as desired, and serve.
