Vanilla Coffee Creamer

One of the most frequent struggles folks new to keto have is giving up commercial coffee creamer. After fielding nearly daily questions about what to use, I decided to create a low carb option. Honestly this creamer turned out even better than I imagined. It reminds me of sweetened condensed milk. It's very concentrated because it's meant for coffee, so don't go dipping your spoon in it!

Ingredients
  

  • 1 cup heavy cream
  • 0.5 cup powdered sweetener
  • 1.5 tablespoons vanilla extract
  • 6 drops liquid sweetener, or to taste

Instructions
 

  • In a small saucepan over low heat, bring the cream to a simmer. Add the powdered sweetener and whisk to dissolve it into the cream.
  • Add the vanilla extract and simmer for 15 to 18 minutes, until the cream is reduced by roughly one-quarter.
  • Remove from the heat and stir in the liquid sweetener. Let the creamer cool and refrigerate the unused portion in a tightly covered container.
  • This will keep in the refrigerator for up to 5 days.

    Refrigerate the unused portion? Every time I make this the people who live in my house suddenly find a reason to drink chai, or hot chocolate and NEED to have some. It’s that good.

      Yes, you definitely want to refrigerate the creamer as it has heavy cream in it. That’s great that everyone loves it so much!

    Which liquid Sweetener do you use in this recipe?

      You can use whichever you prefer. There are several brands of liquid stevia or liquid monkfruit that will work well.

    I choose English Toffee Sweet Drops but was taught to add extracts once pan is off burner so I add with sweetener. ☕
