Taco Skillet Bake

Another great recipe for any large gathering or for a simple dinner. This recipe uses hamburger and Mexican sausage (chorizo) for an out of this world skillet bake.

Serve it with fresh avocado, salsa or pico, and sour cream. Your guests will never know how simple it is–they will just think you’re a culinary genius!

1.25 lbs ground beet
1 lb Mexican sausage (chorizo)
1 cup of chopped onion
1 cup chopped green bell pepper
1/2 tsp salt
1 tsp chopped garlic
1 tsp cumin
2 tsp chili powder
1 14-ounce can of crushed tomatoes (no sugar added)
1 3.5 ounce can green chilies
3 ounces of cream cheese
3 (or more) cups shredded cheddar cheese

Brown ground beef and chorizo. Add onion and bell pepper to the pan and cook until tender. Add seasonings, crushed tomatoes, chilies, and cream cheese. Mix well. Add shredded cheddar cheese. Bake in 375 degree oven for about 20 minutes or until hot and bubbly.

Definitely one of my favorites! On a regular rotation. Added bonus: it freezes well!
