Low Carb Soup’s On: Chow down on Chowder!

It’s time to Chow down on some Chowder! I looked in my pantry and pulled out some delicious ingredients to make this perfect low carb soup for a rainy weekend or cool evening.

Here’s what I used:

4 tablespoons butter
1/2 medium sized onion, chopped
2 cups chopped cauli (include stalks)
2 cups broth (chicken or seafood stock)
1/3 to 1/2 cup white wine
1/4 cup chopped bacon
1/4 tsp salt
1 cup heavy cream
1 tsp garlic
1 tablespoon dried parsley
3 ounces of cream cheese
1 package Trader Joe’s seafood blend (or mix of shrimp, scallops, clams)
8 ounces crab claw meat
1/4 cup sun-dried tomatoes finely chopped (optional)

Add butter and onion to a large stock pot and brown onion. When browned, add garlic, parsley, and cauli. Brown thoroughly and then add white wine, bone both, and cream cheese. Simmer 5-7 minutes until cream cheese is melted and all is well mixed. Cauli should be tender, but not mushy.
add 1 cup of heavy cream and return to a simmer. Add seafood, including crab meat and return to a low simmer. Simmer for 6-8 minutes until seafood is cooked. Served with grated parmesan and bacon pieces.
