Delicious Low Carb Faux-Tato Cakes (Cauli fritters)

Delicious Faux-tato cakes (Cauli Fritters)

2 cups cauli mash
2 tablespoons dried onion
2 tablespoons bacon pieces
2 tops of one green onion, chopped
Salt and pepper to taste (if not in cauli mash)
1/3 cup crushed pork rinds
2 tablespoons oat fiber
2 ounces of shredded cheddar cheese (more if desired)
1 egg, beaten
2 tablespoons of bacon fat for frying

Let mixture sit for about 5 minutes, and then shape into patties about 1.5 inches in diameter. Fry on medium high heat. Be certain they are well browned on each side before trying to flip them over. These are easier to flip if you’ve got mashed cauli without a lot of fat in it. If you’re using fresh cauli mash, don’t add any fat to it.

Serve with sour cream or crème fraiche. Sprinkle green onion and shredded cheese over the top and enjoy your Faux-tato cakes.
