
Fresh blueberries used in a savory sauce for pork or poultry is a nice little change from traditional BBQ sauces. We like the sauce less sweet and more savory, but you can adjust it to your preference. If you’re a fan of thyme, you might want to add additional thyme when simmering.
Savory Blueberry Lemon Thyme Sauce
Ingredients
- 1 tablespoon butter
- ½ ounce finely chopped shallot about one small shallot
- 6 ounces fresh blueberries
- 2 tablespoons lemon juice
- 1 cup chicken broth
- Zest of one lemon
- 1.5 tablespoons chopped fresh thyme leaves about 4-5 sprigs
- ½ teaspoon salt
- 2 tablespoons granulated sweetener or a few drops of liquid sweetener to taste optional
- ¼ teaspoon dried sage optional
Instructions
- Use a 1.5 quart sauce pan to melt the butter on medium heat. Saute the shallots until lightly browned and then stir in the blueberries, stirring to coat them in the butter.
- Pour in the lemon juice and chicken broth. Reduce the heat and bring to a simmer.
- Stir in the lemon zest, fresh thyme, salt, and sage, if using.
- Let the sauce simmer until the blueberries fall apart and the sauce thickens, about 15-20 minutes. The pectin in the blueberries will naturally thicken the sauce even as it cools.
- Taste for sweetness and add according to your preference.
- Sauce can be refrigerated for up to three days or frozen for up to three months.
