
Using bagged coleslaw mix and precooked chicken makes this tasty dish super quick. I often use baked chicken tenderloins, however, rotisserie chicken or even canned chicken works well, too. For the coleslaw mix, I prefer the kind that includes a blend of green cabbage, purple cabbage, and a few shredded carrots. You can make your own, but the bagged coleslaw mix is already washed and chopped and will save you tons of time in the kitchen. This dish is a great option for lunches. Simply toss the ingredients together and go!
Thai Chicken Slaw With Peanut Sauce
Ingredients
- 8 ounces bagged coleslaw mix about 3 3/4 cups
- 1 cup Thai Peanut Sauce See notes
- 20 ounces cooked chicken breast tenderloins or chopped or shredded cooked chicken
- 1/4 cup sliced green onions optional
- 1/4 cup salted peanuts optional
Instructions
- Put the coleslaw mix and peanut sauce in a large bowl. If using chopped or shredded chicken, add it to the bowl as well. Toss the ingredients until well mixed.
- Divide the slaw among four plates. If using chicken tenderloins, place them on top of the slaw. Garnish each serving with 1 tablespoon of sliced green onions and 1 tablespoon of peanuts, if desired. Store leftovers in the refrigerator for up to 2 days.
