Thai Chicken Slaw With Peanut Sauce

Using bagged coleslaw mix and precooked chicken makes this tasty dish super quick. I often use baked chicken tenderloins, however, rotisserie chicken or even canned chicken works well, too. For the coleslaw mix, I prefer the kind that includes a blend of green cabbage, purple cabbage, and a few shredded carrots. You can make your own, but the bagged coleslaw mix is already washed and chopped and will save you tons of time in the kitchen. This dish is a great option for lunches. Simply toss the ingredients together and go!

  • 1/4 cup sliced green onions optional

  • Put the coleslaw mix and peanut sauce in a large bowl. If using chopped or shredded chicken, add it to the bowl as well. Toss the ingredients until well mixed.

Notes

Here is the link for the Thai Peanut Sauce – you will only use 1 cup, not the whole batch. You can use the extra sauce with any grilled meat or even as a salad dressing!
