
A twist on the classic pecan pie, this recipe incorporates rich dark chocolate, which makes it more reminiscent of a Derby Pie. This May Day Pie is perfect for watching the horse races, for Mother’s Day or even for the Thanksgiving or Christmas holiday table.
May Day Pie for the Derby
Ingredients
Crust
- 1 ¼ cup almond flour
- 1/2 cup oat fiber or 1/3 cup coconut flour
- 1 large egg
- 3 tablespoons 1.5 ounces butter, softened
- 1/2 tsp salt
- 3 tablespoons granulated sweetener
Filling
- 6 ounces melted butter
- ¼ cup water
- 3/4 cup sweetener powdered
- 1 teaspoon salt reduce if using salted butter
- 3 teaspoons vanilla extract
- 2 teaspoons maple extract
- 1/2 cup brown sugar substitute
- 1/4 tsp cinnamon optional
- 2 large eggs beaten
- 4 ounces pecan pieces
- 6 ounces 90% dark chocolate chopped
Instructions
- Use low heat to melt the butter in a large, heavy saucepan. Use a whisk to mix the melted butter with the water, powdered sweetener, salt, vanilla, maple extract, brown sugar substitute, and cinnamon until well blended.
- Remove from heat, and let cool slightly before whisking in the eggs. Mix well.
- Stir in pecans and the chocolate. Pour the mixture into the cooled pie crust.
- Bake at 350 degrees for about 35 to 40 minutes. After the first 20 minutes, cover the pecan pie with foil to keep the top from browning too much. Do not over bake. Let the pie cool for at least 30 minutes before serving.
