20ouncescooked chicken breast tenderloins or chopped or shredded cooked chicken
1/4cupsliced green onionsoptional
1/4cupsalted peanutsoptional
Instructions
Put the coleslaw mix and peanut sauce in a large bowl. If using chopped or shredded chicken, add it to the bowl as well. Toss the ingredients until well mixed.
Divide the slaw among four plates. If using chicken tenderloins, place them on top of the slaw. Garnish each serving with 1 tablespoon of sliced green onions and 1 tablespoon of peanuts, if desired. Store leftovers in the refrigerator for up to 2 days.

Here is the link for the Thai Peanut Sauce - you will only use 1 cup, not the whole batch. You can use the extra sauce with any grilled meat or even as a salad dressing!
