
Mushrooms are naturally lower carb and marinating them really amps up the flavor profile. These mushrooms seem to absorb more of the flavor because they are boiled first and then marinated. You can serve this as part of an anti-pasta platter, warm them to serve as a side dish, or slice them up to top a low carb pizza.
Marinated Mushrooms
Ingredients
- 1 lb mushrooms cleaned
- 1 1/2 cup apple cider vinegar divided
- 1 1/2 cup water
- 3 cloves garlic crushed
- 1.5 ounces sliced onion approximately half a small onion
- 1/2 cup olive oil
- 2 teaspoons salt
- 2 teaspoons dried parsley
- 1 teaspoon oregano
- 1 tablespoon Italian seasoning
- 4 drops liquid sweetener optional
- 1/4 teaspoon red pepper optional
Instructions
- Add water and 1 cup of the apple cider vinegar to a large pot. Add the cleaned mushrooms, slicing the larger mushrooms in half if desired. Boil for 5 minutes and drain well.
- Use a clean towel to squeeze the excess moisture from the mushrooms.
- Place the mushrooms in a gallon-sized freezer bag or a large glass jar. Set aside.
- In a separate bowl, mix the remaining 1/2 cup apple cider vinegar, olive oil, garlic, onion, salt, parsley, oregano, Italian seasonings, sweetener and red pepper.
- Pour the marinade over the dried mushrooms, making sure to coat each one. Place the mushrooms in a refrigerator and let marinate at least 12 to 24 hours before serving.
