Marinated Mushrooms

Mushrooms are naturally lower carb and marinating them really amps up the flavor profile. These mushrooms seem to absorb more of the flavor because they are boiled first and then marinated. You can serve this as part of an anti-pasta platter, warm them to serve as a side dish, or slice them up to top a low carb pizza.

  • In a separate bowl, mix the remaining 1/2 cup apple cider vinegar, olive oil, garlic, onion, salt, parsley, oregano, Italian seasonings, sweetener and red pepper.
