Pumpkin Spice 1 Minute Muffins

What if I told you that you could enjoy pumpkin spice coffee AND a pumpkin spice minute muffin AND be completely within keto macros?

Happy season of Pumpkin Spice Everything!

Makes 2 servings 4 total carbs each

2 tablespoons butter, salted
2 tablespoons sweetener
1 tablespoon coconut flour (4.5 carbs)
2 tablespoons whey protein isolate (0 carb Isopure)
2 tablespoons pumpkin puree (2.5 carbs)
1 egg (0.6 carbs)
1/8 teaspoon cinnamon
1/8 teaspoon pumpkin spice
1 tablespoon heavy cream (0.6 carbs)
3 drops liquid sweetener)

Melt the butter in a small glass mixing bowl. When the butter is melted, add the remaining ingredients. Mix well using a small spatula, fork, or whisk. Divide batter among 2 buttered ramekins or small coffee cups and microwave for 1 minute.
