Vanilla Coffee Creamer
One of the most frequent struggles folks new to keto have is giving up commercial coffee creamer. After fielding nearly daily questions about what to use, I decided to create a low carb option. Honestly this creamer turned out even better than I imagined. It reminds me of sweetened condensed milk. It's very concentrated because it's meant for coffee, so don't go dipping your spoon in it!

Ingredients
- 1 cup heavy cream
- 0.5 cup powdered sweetener
- 1.5 tablespoons vanilla extract
- 6 drops liquid sweetener, or to taste
Instructions
- In a small saucepan over low heat, bring the cream to a simmer. Add the powdered sweetener and whisk to dissolve it into the cream.
- Add the vanilla extract and simmer for 15 to 18 minutes, until the cream is reduced by roughly one-quarter.
- Remove from the heat and stir in the liquid sweetener. Let the creamer cool and refrigerate the unused portion in a tightly covered container.
- This will keep in the refrigerator for up to 5 days.
