Place all the ingredients except the paprika in a mixing bowl and stir to combine. Sprinkle with the paprika before serving, if desired. This salad is best if refrigerated for at least 30 minutes before eating but can be served immediately.

Crazy Busy Kitchen Tip: For an even quicker meal, use canned or rotisserie chicken and grab the chopped celery and onions from the grocery store salad bar. Also, instead of hand-chopping the chipotles (my preference for the best flavor and texture), you can toss them into a small blender with the mayo and lime juice and make a quick sauce to pour over the chicken salad.
