Rainbow Layer Cake with Italian Meringue Buttercream
This colorful, happy cake holds fond memories for our family. Grace requested a “cake with different colored layers” and “real buttercream”. Keto, of course.
At the time, it felt like a tall order, but it was fun and fairly simple to make, after I got over the intimidation of making a sugar-free buttercream. Because buttercream, especially a meringue buttercream, can be intimidating to make, it seemed like the perfect recipe to offer in a cooking class.
If you haven’t participated in a cooking class with me before, you should! We get to talk and laugh, and you can ask questions as you create. You have the option of sharing your camera so that we can see you or keeping your camera and audio off during the class. By the end of the class, we will each have a delicious layer cake to share with friends and family.
As soon as you register, you’ll receive a list of ingredients and a list of equipment. Three days before the class, you will get the recipes for both the cake and the buttercream as well as the link to the online course.
We’re doing this class on a new platform, which I think you will love. It allows you to login and see the ingredients list and equipment list. Then the recipes and the live event link will be posted. Afterwards, there should be a recording available.
