Twenty-Minute Skillet!

Truthfully, this easy dinner dish was first made while I was rushing around the kitchen and frantically thinking of ideas for dinner.  A scoop of this and a dash of that and dinner was on the table!  Even better, when I first test-tasted from the skillet, there was an oddly familiar flavor that transported me back to my cook-from-a-box-days.  Hamburger helper?  “Does this taste like that”, I wondered. 20 Minute Skillet

I called the kids to the table and held my breath.  They each took a bite, and Grace said, “This is good!  It tastes like that stuff you used to make with noodles.  Was it called Hamburger Helper?”  I’m not sure I ever answered the child as I began furiously scribbling down what I had done to make that dish that was a pretty instant hit.

20-Minute Skillet Dinner
4 servings
1 pound ground beef
(80% lean)
1 tablespoon bacon fat
1 cup finely chopped cauliflower florets
2 teaspoons Jane’s Crazy Mixed-Up Salt
1/3 cup water
4 ounces cream cheese
(½ cup)
2 tablespoons unsalted butter
1 teaspoon onion powder
1/3 cup heavy cream
2 ounces cheddar cheese, shredded (about ½ cup), plus extra for garnish if desired

DIRECTIONS:

1. Brown the ground beef in a large skillet with a lid over medium-high heat, stirring often to crumble the meat as it cooks.
2. Add the bacon fat, chopped cauliflower, and seasoning salt and cook over medium heat, stirring occasionally. When the cauliflower is just beginning to soften, add the water and cover the skillet with the lid. Cook for 5 to 7 minutes, until the cauliflower is tender.
3. Remove the lid and reduce the heat to low. Add the cream cheese, butter, and onion powder and stir until melted. Add the heavy cream and stir until smooth and creamy. Remove from the heat, stir in the cheddar cheese, and serve immediately. Garnish with additional shredded cheddar, if desired.

      Any seasoning salt without sugar should be fine.

    Was eagerly reading this recipe until I got to Jane’s Crazy Mixed-Up Salt, I have pre-ordered your book (in Australia) and now I’m hoping that I haven’t wasted my money on a recipe book full of recipes with ingredients only available in the US. I don’t understand why you haven’t made your own version of the ingredient mentioned above so people the world over can buy and get full use of the book.

      Any seasoning salt that doesn’t have sugar should work. i worked really hard in this book to make sure that the ingredients were pretty simple.

    Do you drain the grease from the ground beef after browning?

      That’s entirely up to you. I don’t usually, but it depends on the fat content of the meat.

    This is really good, i made just 2 tweaks and added minced dried onion to soak up all that good fat and also 1 cup chopped broccoli. YUM.

    I made my own jane’s crazy salt from a recipe on the web since it is hard to get here. I found the recipe a bit soupy but it tasted great!
